Long before Haines or any other European settled in Alaska, however, the indigenous  people had long lived on whatever meat animals they could kill and prepare.  In fact, when the first French explorers met and spent time with the indigenous people in the north of what is now Canada, they were so impressed by the predominance of uncooked meat in their diets that they called them “Esquimeaux,” which is French for “eaters of raw meat.”  Further down the coasts of Canada and Alaska, however, salmon run by the millions up the great rivers and are caught and used by the local people.  These Americans now eat their salmon after it has been smoked or cooked, as told in the following poem, “Subsistence #2” by Andrew Hope, III
